Soupe aux Lentilles Rouge
INGREDIENTS
3 tbsp. Olive Oil
1 Spanish Onion - diced
6 Garlic cloves - minced
2 tbsp. Fresh Ginger - grated gingembre
1 tsp. Cumin - ground
1 tsp. Curry powder or paste
1 tsp. Coriander
½ tsp Cinnamon - ground
1 tsp. Cayenne Pepper
2 cups Red Lentils
8 cups Chicken or Vegetable Stock - unsalted
14 ounces Diced Tomato
1 can Coconut Milk - unsweetened
Juice from 2 limes
Salt and Pepper to taste
Fresh Coriander
Grated Coconut
INSTRUCTIONS
1- In a large pot, cook onion in olive oil, 5 minutes or until translucent.
2- Add garlic, ginger and spices. Cook for one minute while mixing.
3- Add red lentils, stock and diced tomatoes. sel et poivre
4- Bring to a boil, then reduce heat to minimum.
5- Simmer for 20 minutes without the lid. When lentils break down, add coconut milk.
6- Add lime
7- Add salt and pepper to taste
8- Serve with fresh coriander and grated coconut.
