- Pulse a 1/2 cup of pumpkin seeds and one small garlic clove in food processor
- Add 1 tbsp of nutritional yeast (or Miso), a little black pepper, some dulce (honey) and pulse again
- Add 2 cups packed of chopped kale and 2 tbsp of lemon juice
- With processor running drizzle in 1/2 cup olive oil
- Process until mixed to the consistency of pesto
BONUS:
Add some of this pesto to a basic lemon juice and olive oil salad dressing for the best tasting dressing ever. (Equal amounts lemon juice and olive oil.)
