Red Lentil Soup

 Soupe aux Lentilles Rouge

INGREDIENTS

  • 3 tbsp. Olive Oil

  • 1 Spanish Onion - diced

  • 6 Garlic cloves - minced

  • 2 tbsp. Fresh Ginger - grated gingembre

  • 1 tsp. Cumin - ground

  • 1 tsp. Curry powder or paste

  • 1 tsp. Coriander

  • ½ tsp Cinnamon - ground

  • 1 tsp. Cayenne Pepper

  • 2 cups Red Lentils

  • 8 cups Chicken or Vegetable Stock - unsalted

  • 14 ounces Diced Tomato

  • 1 can Coconut Milk - unsweetened

  • Juice from 2 limes

  • Salt and Pepper to taste

  • Fresh Coriander

  • Grated Coconut

INSTRUCTIONS 

1-    In a large pot, cook onion in olive oil, 5 minutes or until translucent.

2-    Add garlic, ginger and spices. Cook for one minute while mixing.

3-    Add red lentils, stock and diced tomatoes. sel et poivre

4-    Bring to a boil, then reduce heat to minimum.

5-    Simmer for 20 minutes without the lid. When lentils break down, add coconut milk.

6-    Add lime

7-    Add salt and pepper to taste

8-    Serve with fresh coriander and grated coconut.
